1 head cauliflower, large chop in bite sized pieces and cooked
8 slices of cooked and diced bacon
1 pint grape tomatoes,split in half and roasted in oil for 375 about 20 minutes
2 leeks chopped
½ c mayo
2 diced green onions
Salt and pepper to taste
Garlic, dill and parsley to taste or Weaver’s ranch seasoning
Saute leeks until translucent and tender in butter. Add ranch seasoning or herbs. Mix in mayo and combine all and refrigerate to let flavors meld.
